Chocolate Cranberry Pear Bread

One of my biggest peeves is seeing good food go to waste. So yesterday as I was cleaning out our fridge, I paused before tossing two over-ripe pears in the trash. They were too soft to eat, but they weren’t brown yet either. I thought well, if you can make banana bread from over-ripe bananas why couldn’t the same be true for a pair of pears? A little internet research and behold – pear bread!

Bacon Mushroom Scallion & Mozzarella Frittata

I think I do some of my best cooking when I don’t think too much about it. I hosted a brunch this weekend after just moving into a new house and recovering from a nasty cold, which left me minimal energy to put into planning the brunch menu. I went to the store the day before and winged it, throwing ingredients that caught my eye into my basket with no formal plan as to how I would use them. The day of the brunch, I rummaged in my fridge and pulled together the single most delicious breakfast frittata I for one have ever eaten.

Healthy Pancakes

When I was a kid, every Sunday the family would have breakfast out at our local diner. I always ordered pancakes, and I was in heaven. As an adult, my love affair with pancakes continues. I still crave a big thick stack of cakey griddle goodness for breakfast every so often!

As one who strives to eat healthfully (most of the time), I didn’t want to feel guilty about my pancake addiction or feel weighed down afterward. So I created a recipe that includes whole wheat flour, wheat germ, whey protein, skim milk, and yogurt in place of oil. The result – a nutritious, light, fluffy pancake I can happily enjoy as often as I like (well, when I’m not having oatmeal for breakfast, that is).

Everyday Oatmeal

This particular oatmeal recipe has been a staple breakfast in our house this winter. Some weeks I find us craving this everyday and just varying the mix-ins. It’s a delicious, healthy rib-sticking yet quick oatmeal, packed with flavor and texture that keeps you full and energized through to lunch. Can you honestly say that about a bowl of cold cereal?
